Spiced Pork Burger (Roujiamo) Recipe from Shaanxi

Ingredients for Spiced Pork Burger:
– Pork belly, an appropriate amount


– Ginger, 5 pieces


– Green onions, 3 stalks


– Spices (star anise, cinnamon, bay leaves, fennel seeds, dried red chili peppers, Sichuan peppercorns), an appropriate amount


– Salt, an appropriate amount


– Lard, an appropriate amount



Steps for making Spiced Pork Burger:


1. Soak the pork belly in cold water for an hour to remove any unwanted odors (I cut it into large pieces for easier eating, but it’s optional).


2. Prepare the spices; I didn’t use fennel seeds as I ran out at home.


3. Wrap the spices in a cheesecloth bag, and place green onions, ginger, and rock sugar into the pressure cooker. Add three spoons of salt and an appropriate amount of dark and light soy sauce.


4. Don’t use too much water; just enough to slightly cover the ingredients, as the pressure cooker won’t lose moisture.


5. Simmer for one hour.


6. While the meat is cooking, prepare the white buns. Combine flour, baking powder, yeast, and lard to make the dough.


7. Use a stand mixer to knead the dough to a harder consistency for a crispy texture.


8. Cover the dough with a damp cloth and let it rest for half an hour (it doesn’t need to double in size).


9. Roll the dough into a long log.


10. Break off small portions.


11. Round the portions into balls.


12. Mix a small amount of lard with five-spice powder.


13. Roll out a ball and spread a layer of the spiced lard.


14. Roll it up.


15. Flatten the roll.


16. Pan-fry the buns until both sides are golden brown.


17. Bake the buns in the oven at 180 degrees for about six to seven minutes.


18. Once all the buns are done,


19. Cut one open,


20. Chop a piece of meat and add it to the bun. Pour some of the meat cooking broth over it.
