Rou Jia Mo Recipe: Traditional Shaanxi Snack

Ingredients for Rou Jia Mo: 250g plain flour, 3.5g yeast, 1.5g baking powder, 1.5g salt, 135g warm water, and a portion of braised pork.
Method:

Step 1: Combine flour, yeast, baking powder, salt, and warm water to form a smooth dough.

Step 2: Cover with plastic wrap and let it rise for about 1 hour, until the dough has doubled in size.

Step 3: Divide the risen dough into 4 portions, round them, and brush the surface with a little oil, then let them rest for 15 minutes.

Step 4: Roll the rested dough into long strips.

Step 5: Flatten and roll out the dough with a rolling pin.

Step 6: Fold the dough in half.

Step 7: Roll up from one side, pressing the end at the bottom of the pancake.

Step 8: After the pancake dough has rested for 10 minutes, roll it out again and place it in a frying pan. Cook over low heat without oil until both sides are golden brown.

Step 9: Chop the pre-cooked braised pork and add it to the pancake.

Step 10: Your delicious Shaanxi snack, Rou Jia Mo, is ready.

Cooking Tips:

1. This article mainly discusses the method of making the pancake in Rou Jia Mo. For the meat, refer to my previous recipe—Secret Braised Pork.

2. The recipe yields 4 servings.

3. Some may ask why to use both yeast and baking powder when making the pancake. Yeast is for fermentation, while baking powder helps maintain the fluffiness of the pancake.
