Ingredients for Water Chestnut Cake: 125g water chestnut flour, 2-3 water chestnuts, 250g brown sugar cubes, 800g water.
Method:
Step 1: Prepare the ingredients. Dice the water chestnuts into small pieces.
Step 2: In a bowl, pour 125 grams of water chestnut flour and 150 grams of water. Stir well with a spoon to avoid any lumps.
Step 3: Pour the remaining 650 grams of water into a pot. After boiling, add the brown sugar cubes and melt them into brown sugar water.
Step 4: Now prepare for ‘rushing the paste’. Before doing so, stir the water chestnut paste with a spoon. Raw water chestnut flour is not soluble in cold water and tends to settle at the bottom of the bowl; stirring a few times ensures even distribution. Rushing the paste: While continuously stirring the water chestnut paste, pour the boiling sugar water in evenly. The sugar water should be poured immediately after boiling. Stir until you achieve a very thick paste.
Step 5: This is the paste I stirred. It is very thick, similar to a batter.
Step 6: Pour the diced water chestnuts into the well-stirred paste. Place the prepared paste into a steamer that has been de-gassed. Steam for 20 minutes.
Step 7: The steamed water chestnut cake will be translucent and shiny.

Cooking tips for water chestnut cake: Water chestnuts are cool in nature and sweet in taste. They can clear heat, produce body fluids, cool the blood, and detoxify. They also help to soothe the liver, improve vision, and promote the smooth flow of qi. This recipe is my second attempt. The first time, I used only 690 grams of water, which resulted in a less soft and slightly dry cake. So, for the second time, I used 800 grams of water.
However, it seemed a bit too much, so I recommend using 750 to 780 grams of water. Also, because of the less water in the first attempt, I used only 200 grams of brown sugar cubes, but for the second attempt with more water, I used 250 grams of sugar. It’s a bit too sweet. If you don’t prefer too much sugar, you can use 200 to 230 grams of brown sugar cubes. There are tricks to making delicious dishes, and each of my dishes has its own little secret.
