Sichuan Spicy and Sour Rice Noodle Recipe

Ingredients for Spicy and Sour Rice Noodles: 150g sweet potato noodles, 100g minced pork, 100g sour long beans, 2 pork bone sticks, 200g mung bean sprouts, 50g small chili peppers, 30g ginger paste, 30g chopped green onions, 30g minced garlic, 50g cilantro, 50g crushed peanuts, 60g aged vinegar, 30g soy sauce, 15g Pixian bean paste, 5g sesame oil, 5g Sichuan peppercorn oil.
Method for Spicy and Sour Rice Noodles: Step 1: Prepare a pot of bone broth as the base. Add approximately 1500ml of water to a pressure cooker, bring to a boil over high heat, then skim off the foam.


Step 2: Add mung bean sprouts.


Step 3: Close the lid, reduce the heat to low after the steam rises, and simmer for about 30 minutes, then turn off the heat. This broth can be made in larger quantities and frozen for later use, suitable for both noodles and rice dishes.


Step 4: Stir-fry the ingredients for the spicy and sour rice noodles. Use a non-stick pan over low heat without oil, slowly stir-fry the minced pork until dry, then set aside.


Step 5: Pour oil into the pan, add 1 tablespoon of Pixian bean paste and fry until fragrant.


Step 6: Then add ginger paste, stir-fried minced pork, chopped sour long beans, and small chili pepper pieces, stir-fry for a few minutes, then set aside.


Step 7: Place the soaked sweet potato noodles into boiling water and cook until slightly firm in the center.


Step 8: Drain the cooked noodles and place them in a bowl, then pour over the bone broth.


Step 9: Top with the previously stir-fried sour long bean and minced pork mixture, add 4 tablespoons of aged vinegar, 2 tablespoons of light soy sauce, 1 teaspoon of sesame oil, and 1 teaspoon of Sichuan peppercorn oil, mix well to season.


Step 10: Sprinkle with crushed peanuts, cilantro, and chopped green onions, and serve.
