Sichuan Spicy and Sour Glass Noodle Recipe

Ingredients for Spicy and Sour Glass Noodles: Sweet potato noodles, as much as desired; Cabbage or other vegetables, as needed; Salt, as needed; Vinegar, as needed; Light soy sauce and dark soy sauce, as needed; Chicken broth, a large bowl; Homemade chili oil; White pepper, as needed; Lean minced meat, as needed; Garlic, as needed; Ginger, as needed; Chopped green onions, as needed.
Method for Spicy and Sour Glass Noodles: Step 1: Finely chop garlic and ginger (optional if not preferred), and prepare chopped green onions and minced lean meat. Step 2: Clean and cut the vegetables (choose according to your taste). Step 3: Add salt and chicken essence to dried chili powder and pour into boiling oil. Step 4: Stir-fry the vegetables, garlic, ginger, and minced meat in a pot without adding salt.


Once cooked, set aside. Step 5: Pour a small amount of chicken broth into a pot (you can add boiling water if chicken broth is not available; alternatively, season with salt, chicken essence, soy sauce, oil, and scramble an egg to make a broth). Cook the soaked sweet potato noodles in the broth for five minutes after it comes to a boil. Step 6: Place the stir-fried vegetables and minced meat into a bowl with vinegar, chili oil, and soy sauce.


Step 7: Drain the noodles into the bowl, ladle two spoonfuls of soup, and garnish with chopped green onions. Enjoy this delicious dish! Step 8: In the morning, my brothers and I enjoyed a hearty meal, finishing every last bite of the Spicy and Sour Glass Noodles.
