Sichuan Spicy and Sour Rice Noodle Recipe

Ingredients for Spicy and Sour Rice Noodles: 200g sweet potato noodles, 80g lettuce, 50g peanuts, an appropriate amount of minced garlic, 6g light soy sauce, 8g fragrant vinegar, 2g Sichuan peppercorns, 6g chili sauce.
Method: Step 1: Soak the pre-cooked sweet potato noodles in cold water for a while. Step 2: Heat oil in a pan. Step 3: Add raw peanuts to the pan. Step 4: Stir-fry until the peanuts are cooked. Step 5: Add more oil and Sichuan peppercorns to the pan. Step 6: Fry until fragrant, then add minced garlic and scallion, stir well, and then add chili sauce. Step 7: After stir-frying, add fragrant vinegar. Step 8: Add light soy sauce. Step 9: Then add water. Step 10: Bring to a boil over high heat. Step 11: Add the soaked noodles to a bowl. Step 12: Cook until the flavors are well combined, then add lettuce and blanch until cooked. Step 13: Transfer to a sweet potato bowl. Step 14: Arrange the stir-fried peanuts on top.
