Shaanxi Pea Flour Porridge Recipe

Ingredients for Pea Flour Porridge:
– 500g pea flour


– 5 walnuts


– 50g peanuts


– 50g almonds


– A handful of black sesame seeds


– A handful of white sesame seeds


– Salt to taste


– Scallions to taste



Method for making Pea Flour Porridge:


Step 1: Shell the walnuts, peanuts, and almonds. (I’ve shown a small amount, but you’ll need more in practice.)


Step 2: Heat a pan and dry-fry the walnuts until fragrant.


Step 3: Add black and white sesame seeds and fry until fragrant.


Step 4: Similarly, fry the peanuts and almonds until fragrant.


Step 5: Roughly chop the nuts. I prefer larger pieces for a textured bite, but some commercial versions use whole nuts.


Step 6: Fry the pea flour in the pan, mix in salt evenly, and then add the chopped nuts.


Step 7: To serve, you can either pour boiling water directly or mix with cold water and cook over low heat until thickened. Taste and add more salt if needed.


Step 8: Serve and garnish with chopped scallions.
