Ingredients for Homemade Liangpi: 500g flour, 1 cucumber, 1 carrot, 100g peanuts, 50g garlic, 10g cilantro.
Method:
Step 1: Take an appropriate amount of flour and knead it into a moderately wet dough. Cover with plastic wrap and a damp cloth, let it rest for 30 minutes.
Step 2: Find a basin, add some water, and knead the dough repeatedly, rubbing it as if washing clothes.
Step 3: Filter out the residue from the basin.
Step 4: Continue washing until the water runs clear, leaving behind the yellow gluten.
Step 5: Let the washing water rest for 4-5 hours, in the refrigerator for better results.
Step 6: Rinse the gluten with water and steam for 15 minutes.
Step 7: Once the gluten is cooked, cut it and set aside.
Step 8: Remove the clear water from the surface of the washing water, and stir the remaining mixture evenly with a spoon.
Step 9: Boil water beforehand, take a round-bottomed container, brush the bottom of the plate with oil, pour in the washing water, and steam for about 1 minute.
Step 10: When it becomes transparent, it’s ready.
Step 11: Slice the prepared ingredients, fry the peanuts until cooked.
Step 12: Add an appropriate amount of chili, aged vinegar, and sesame oil to make a cold dish. The delicious Liangpi is now ready.
Cooking Tips for Homemade Liangpi: When mixing the dough, you can add a pinch of salt to make the dough more elastic and flavorful.
