Spicy Soup Recipe from Shaanxi

Ingredients for Spicy Soup: Potatoes – 2, Carrots – 1, Cauliflower – 1/3 head, Cabbage – 1/3 head, Black pepper, Salt, Soy sauce, Starch.
Method of making Spicy Soup: Step 1: Dice the potatoes and carrots. Step 2: Cut the cauliflower into pieces and tear the cabbage into pieces. Step 3: Heat oil and fry Sichuan peppercorns until fragrant, then stir-fry the diced potatoes and carrots, add cauliflower and stir-fry for a while, then add an appropriate amount of water. Step 4: Cook the potatoes until they are soft and mashed, add cabbage; season with salt, black pepper, and soy sauce. Step 5: Prepare a starch slurry. Step 6: Pour the starch slurry into the pot to thicken the soup. Step 7: Serve in a bowl and top with fragrant chili oil. Perfect!
