Spicy Cumin Roujiamo Recipe

Ingredients for Spicy Cumin Roujiamo: Flour 500g, Water 260ml, Yeast 5g, Pork 350g, Green Pepper 300g, Erjingtiao 100g, Salt to taste, Chili Powder to taste, Cumin Powder to taste, Sichuan Pepper Powder to taste, Soy Sauce to taste, Onion 1, Cooking Oil to taste, Monosodium Glutamate to taste.
Method Steps:


Step 1: Combine 500g of all-purpose flour with 260ml of warm water, 5g of yeast, and 2g of salt to form a crumbly mixture.


Step 2: Knead into a dough, cover with plastic wrap, and let it rise at room temperature for 2 hours.


Step 3: The fermented dough should double in size and not spring back when pressed with a finger.


Step 4: Cut the dough into equal portions, roll into cylinders, flatten, and roll into balls, then rest for 10 minutes.


Step 5: Roll out the dough with a rolling pin to form flatbreads.


Step 6: Heat a frying pan without oil, and bake each side of the flatbreads for about 3 minutes until cooked.


Step 7: Prepare a piece of pork.


Step 8: Slice it into thin strips. Season with salt, cumin powder, Sichuan pepper powder, starch, and cooking oil, and marinate for 20 minutes.


Step 9: Prepare 300g of green pepper and 100g of Erjingtiao.


Step 10: Slice them into thin strips.


Step 11: Heat oil in a wok, fry the sliced onions until fragrant, and then cook the marinated pork strips until done.


Step 12: Leave some oil at the bottom of the wok, and add the green pepper and Erjingtiao.


Step 13: Add chili powder, cumin powder, salt, and a little soy sauce, then stir-fry for a while.


Step 14: Pour the cooked pork strips back into the wok and stir-fry together.


Step 15: Serve and plate the dish.


Step 16: Cut a slit in the flatbread and stuff it with the stir-fried vegetables.
